Artichoke & Corn Dip

Who doesn't love an easy & delicious appetizer? This recipe is a family favorite and perfect for any get-together. It's sweet & savory & cheesy. It comes together quickly & would be a great dish to serve for the Super Bowl or your next happy hour. We hope you love it as much as we do.

  • 1 (14 oz) can artichoke hearts, drained & chopped

  • 1 (16 oz) can corn kernels, drained

  • 1/2 cup chopped green onions

  • 1/2 can chopped jalapeno chiles, drained

  • 1 cup shredded Cheddar cheese

  • 1 cup grated Parmesan cheese

  • 1/2 cup mayonnaise

  • 1 to 2 tablespoons garlic powder

  • 1 teaspoon salt (more if desired)

  • Dashes of hot sauce to taste


Combine the artichokes, corn and green onions, jalapeno chiles, Cheddar cheese and Parmesan cheese in a bowl. Add in the mayo, garlic, salt & hot sauce. Mix well. Pour in a lightly greased baking dish; sprinkle with more cheese & top with green onions. Bake at 400 degrees for 20 min or until hot/bubbly. Serve with your favorite corn chips. We love serving with Fritos. Enjoy!
