Cheesy spinach & bacon dip



Raise your hand if you're still getting back into the groove of things after Christmas break! This week has been a doozy ... and I'm already counting down until my three-day weekend later this month. With the holidays & chilly temps (Friday's forecast calls for snow!), we've been hunkering down at home. Lots of organization, new books & Netflix. I wish I could say I'm tackling a healthy diet like Whole 30, but following last year's craziness, I just want to commit to making 2021 the best year for me personally & professionally. That being said, we've been whipping up lots of tried & true recipes ... and sampling new ones, like this cheesy spinach & bacon dip. We served it up with toasted bread, and it was quickly gobbled up. We love that you can make it ahead & it's filling ... meaning there's bound to be some leftover for reheating. If you love spinach dip, you have to try this! It combines the creaminess of traditional spinach dip with a hint of savory & smokiness. While we served ours with toasted bread, you could also pair with tortilla chips or crackers. This is a quick & easy recipe to keep on hand for company, game days, weeknights, holidays ... pretty much any occasion! Enjoy! P.S. In the spirit of sharing, my 2021 resolutions are to focus on my self-care, exercise, read even more books (tackled 20 last year) & save money (less spending on clothes & dinners out) & get back on the dating scene. Ingredients

  • 10 slices of bacon (I didn't use the full amount)

  • 8 ounces cream cheese, softened (substituted Neufchâtel)

  • 1/3 cup mayo

  • 1/3 cup sour cream

  • 1 - 2 teaspoon garlic powder

  • 1 - 2 teaspoon paprika

  • 1 lb. frozen chopped spinach, thawed & squeezed of excess liquid

  • 1 cup freshly grated Parmesan

  • 1 cup shredded mozzarella, divided

  • 1 baguette, sliced & toasted


Directions

  1. Heat oven to 350 degrees. In a large nonstick skillet, cook bacon until crispy. Drain on a paper towel, then chop.

  2. In a large bowl, stir together cream cheese, mayo & sour cream, garlic powder & paprika. Season with salt & pepper. Fold in chopped spinach, bacon, Parmesan & 3/4 cup of mozzarella.

  3. Transfer dip to a baking dish & sprinkle with remaining 1/4 cup mozzarella. Bake until golden & bubbly. About 25 to 30 minutes.

  4. Serve with crostini (or your choice of crackers/bread/chips).
