Retro (aka our Great Aunt's) Summer Strawberry Pie



We love family recipes. They are the best, tried and true. Today, we're letting you in on a little dessert secret and sharing one of our family recipes with you: Our Great Aunt Delores' famous strawberry pie. Our family loves pies. Our mom grew up eating this classic summer recipe and enjoys making it for summer get-together's. This pie is light, refreshing and so delicious! We top ours with homemade whipped cream -- easy to make and much better than store bought whipped cream -- and fresh strawberries to garnish. We promise this pie tastes as good as it looks. Enjoy!!

Ingredients

  • 3 tablespoons cornstarch

  • 1 cup sugar

  • 1/2 cups water

  • 1 box (3 oz) strawberry Jell-O

  • 2 cups fresh sliced strawberries

  • 1 (10-inch) pie crust, pre-baked

  • Whipped cream for topping

Directions

Line the bottom of a pie crust with sliced strawberries. Combine cornstarch, sugar and water in small saucepan. Bring to a boil and simmer, stirring constantly, until thickened. Add the Jell-O and stir until dissolved. Pour gelatin mixture over strawberries and refrigerate until set. Serve with whipped cream and fresh strawberries for garnish!


For homemade whipped cream: You'll need one cup heavy cream, one tablespoon confectioners sugar and 1 teaspoon vanilla extract. In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, cream will then become lumpy and butter-like.
