One Pot Pasta with Peas and Mint
Happy Friday friends! Today we wanted to share a pasta recipe we made earlier this week. We were craving a light "springy" pasta and came across this one pot recipe from Bon Appetit. It is refreshing, creamy yet filling and also easy to make. A few notes: I subbed heavy cream for half and half and added a little extra ground pepper. We served ours with grilled chicken, but it would also be delicious with grilled shrimp or prosciutto. Top with fresh Parmesan cheese and a sprig of mint. This recipe will definitely be added into rotation and is a great go to for an easy, delicious weeknight meal. Bon Appetit!
